If a wife filed for divorce and a protection order, but doesn't give any paperwork to her husband what should he do to defend himself? How does he comply without any information?

You should hire an attorney. She is required to personally serve you the paperwork for the protection order. I would go to the Court clerk and ask if she filed a "return of service". If she has, I would contest that it is valid service.
